Carrot and Banana Bread

This recipe is beautifully moist. It is really simple to make with ingredients you probably have on hand.
Ingredients
- 2 cups spelt flour
- 1/3 cup brown sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1/2 cup almond milk
- 1/4 cup olive oil
- 3 medium bananas, mashed
- 3 carrots, grated
- 3/4 cup chopped pecans
Instructions
- Preheat oven to 180 degrees
- In a large mixing bowl, add flour, sugar, cinnamon, baking powder and soda and salt. Mix.
- Add milk, oil and mashed bananas. Fold in carrots.
- Place mixture in a load tine and bake for 50 – 55 minutes.
- Cool for ten minutes in the pan and then remove it to cool completely.
