Broccoli Fettuccine

I made my sauce chunky but you can process it until smooth as well to make it more saucy.

Ingredients
  1. 1 head broccoli
  2. 150 grams fettucine
  3. 1 1/2 tbsp olive oil
  4. 3 tbsp almond milk
  5. 1 tbsp nutritional yeast
  6. squeeze lemon juice
  7. warm water
  8. chilli to taste
  9. salt and pepper to taste
Instructions
  1. Cook pasta to packet directions.
  2. Cut broccoli into florets and steam.
  3. Once broccoli is cooked add it to a processor. Add milk, olive oil, lemon juice, chilli and warm water until the texture is to your liking.
  4. Add salt, pepper, nutritional yeast and give it a quick pulse.
  5. Strain pasta and serve in a bowl. Top with the sauce and extra nutritional yeast flakes.
