Vegan Mint and Coriander Pesto
Great as a sauce with a protein, in salads or as a sandwich spread.

- bunch coriander
- 1/2 bunch mint
- 1/2 cup cashews (or use what you have - I have used sunflower seeds & hemp seeds too)
- 1 tbps lemon juice
- 1 tbsp flaxseed oil
- 1 clove garlic minced
- salt to taste
- Blend all ingredients until creamy.
